Sure you've tried a lot of recipes for Muffins, but for sure no-so-healthy, natural and that brings so many nutritional properties such as this.
Enjoy this recipe, great for breakfast or snack perfect. The smallest of the house will be very happy!
You will need:
- 1/3 cup almond flour or 20 g of chopped almonds
- 2 tablespoons spelt flour (to the extent possible)
- 1 cup of Ecolife Raw Cacao powder
- 2 teaspoons of flaxseed meal
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon of sea salt fine
- 1/4 teaspoon ground cardamom
- 1/3 cup cane sugar or brown
- 1/3 cup Greek yogurt
- 1/4 cup coconut oil
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 4 tablespoons of Ecolife Nibs of Cocoa
Instructions:
- Preheat the oven to 200 º degrees.
- Prepare a mold for 6 paper cups.
- In a medium bowl, add the flours, cocoa powder, flaxseed meal, baking powder, baking soda, salt, and cardamom and whisk by hand until combined.
- In a large bowl, mix together the sugar, yogurt, oil, egg and vanilla until you get a homogeneous mixture.
- Gradually add mixture of flour in the large bowl until well mixed throughout, while also incorporating the Ecolife Nibs of Cocoa.
- Pour the mixture evenly into the muffin.
- Bake 13 to 15 minutes, until a toothpick inserted in the center comes out clean.
- Cool the muffins in the pan for 5 minutes, in order to subsequently transfer them to a rack where they can cool down completely.
